Is an Australian cow's milk blue cheese with a creamy saltiness. It’s light and smooth and its paste is perfect for spreading. Best served with dried fruit and/or walnut bread.  Selected blue moulds are added to the curd which is then hooped and salted before maturation under a wax coating.
